Skipped the kale, but otherwise followed the recipe and it turned out well and very tasty. Pat Posted Thursday at 01:05 PM Share Posted Thursday at 01:05 PM Tuesday night we had a green salad and Mixed Mushroom Shepherd's Pie, another recipe from The Weeknight Vegetarians Get Simple. As laid out, the recipe appears fairly simple, but it was much more time-intensive than I was thinking. Delicious, though. Since it was the first time making it, I made the recipe as written but will adjust in the future. I made the mashed potatoes called for in the recipe, but, obviously, this type of recipe is designed to utilize leftover mashed potatoes. That would certainly speed things up. Last night was another salad and pita from Yellow, along with leftover couscous with roasted vegetables.
